1 cup grated zucchini, squeezed dry
½ cup crumbled feta cheese

1 large egg
½ cup milk
¼ cup olive oil
Instructions
Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease it well.
In a large bowl, whisk together the flour, baking powder, baking soda, salt, and pepper.
Add the squeezed dry zucchini, crumbled feta cheese, and fresh dill or parsley to the dry ingredients. Stir to combine.
In a separate medium bowl, whisk together the egg, milk, and olive oil.
Pour the wet ingredients into the dry ingredients. Stir gently with a spoon until just combined. Do not overmix; a few lumps are fine.
