1 block (14 ounces) extra-firm tofu, pressed and cubed
2 tablespoons soy sauce
1 tablespoon cornstarch
2 tablespoons sesame oil, divided
1 tablespoon grated fresh ginger
2 cloves garlic, minced
1 cup broccoli florets
1 red bell pepper, sliced
1 carrot, julienned
1/4 cup stir-fry sauce (recipe below)
2 tablespoons toasted sesame seeds, for garnish
Cooked rice, for serving
Instructions
In a bowl, toss the tofu cubes with soy sauce and cornstarch until evenly coated.
Heat 1 tablespoon of sesame oil in a large skillet or wok over medium-high heat.
Add the tofu and cook until golden brown and crispy on all sides. Remove tofu from skillet and set aside.
Add the remaining 1 tablespoon of sesame oil to the skillet.
Add the grated ginger and minced garlic and stir-fry for 30 seconds until fragrant.
Add the broccoli florets, sliced red bell pepper, and julienned carrot to the skillet.
Stir-fry the vegetables for 5-7 minutes until tender-crisp.
Return the crispy tofu to the skillet.
Pour the stir-fry sauce over the tofu and vegetables.
Toss everything together to coat evenly and heat through for 1-2 minutes.
Serve immediately over cooked rice, garnished with toasted sesame seeds.
Notes
For extra crispy tofu, ensure you press out as much water as possible.
Feel free to add other vegetables like snap peas, mushrooms, or water chestnuts.
Adjust the amount of ginger and garlic to your preference.
