1.5 lb pork tenderloin
1 lb carrots, peeled and cut into 1-inch pieces
1 lb small potatoes, quartered
4 tablespoons olive oil, divided
4 cloves garlic, minced
1 teaspoon dried rosemary
1 teaspoon dried thyme
1/2 teaspoon dried oregano
1 teaspoon salt
1/2 teaspoon black pepper
Instructions
Preheat your oven to 400°F (200°C). Line a large rimmed baking sheet with parchment paper for easier cleanup.
In a small bowl, mix 2 tablespoons of olive oil with the minced garlic, rosemary, thyme, oregano, salt, and pepper to create the herb rub.
Pat the pork tenderloin dry with paper towels. Rub the herb mixture evenly over the entire surface of the pork.
In a separate bowl, toss the cut carrots and potatoes with the remaining 2 tablespoons of olive oil, a pinch of salt, and pepper.
Arrange the seasoned vegetables in a single layer on the prepared baking sheet.
Place the seasoned pork tenderloin in the center of the baking sheet among the vegetables.
Roast for 20 minutes.
After 20 minutes, gently toss the vegetables around the pork to promote even cooking.
Continue roasting until the pork reaches an internal temperature of 145°F (63°C) and the vegetables are tender, about 10 to 15 more minutes.
Remove the pan from the oven. Let the pork rest on a cutting board for 5 to 10 minutes before slicing. Slice the pork into 1/2-inch thick medallions and serve immediately with the roasted vegetables.
Notes
For crispier vegetables, ensure they are in a single layer and not overcrowded on the sheet pan.
You can substitute sweet potatoes for white potatoes if desired.
If you prefer a stronger garlic flavor, add an extra clove of garlic to the herb rub.
