1.5 lb boneless, skinless chicken thighs or breasts, cut into 1.5-inch pieces
1.5 lb sweet potatoes, peeled and cut into 1-inch cubes
3 tablespoons olive oil, divided
3 tablespoons Harissa paste
1 teaspoon ground cumin
0.5 teaspoon salt
0.25 teaspoon black pepper
1 red onion, cut into wedges
1 lemon, cut into wedges for serving
Instructions
Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a large, rimmed baking sheet with parchment paper for easier cleanup.
In a large bowl, combine the sweet potato cubes, 1 tablespoon of olive oil, and half of the salt and pepper. Toss to coat evenly. Spread the sweet potatoes in a single layer on one half of the prepared baking sheet.
In the same bowl, combine the chicken pieces, the remaining 2 tablespoons of olive oil, Harissa paste, cumin, and the remaining salt and pepper. Mix until the chicken is fully coated.
Arrange the seasoned chicken pieces on the other half of the baking sheet. Scatter the red onion wedges among the chicken and potatoes.
Place the baking sheet in the preheated oven. Roast for 20 minutes.
After 20 minutes, gently toss the sweet potatoes and chicken to promote even cooking. Return the pan to the oven and roast for another 10 to 15 minutes, or until the chicken is cooked through (internal temperature reaches 165 degrees Fahrenheit) and the sweet potatoes are tender.
Remove from the oven. Serve immediately with fresh lemon wedges.
Notes
If you prefer crispier potatoes, roast them alone for 10 minutes before adding the seasoned chicken to the pan.
Use chicken thighs for juicier results, or chicken breasts for a leaner option.
Adjust the amount of Harissa paste based on your preferred spice level.
