Create a delicious and easy salmon and vegetable dinner with this sheet pan recipe. A simple honey-garlic glaze makes it a perfect weeknight meal.

  • 1.5 lbs salmon fillet
  • 1 lb broccoli florets
  • 1 red bell pepper, sliced
  • 1 red onion, sliced
  • 3 tbsp olive oil
  • Salt and pepper to taste
  • For the Glaze:
  • 1/4 cup honey
  • 2 tbsp soy sauce
  • 1 tbsp minced garlic
  • 1 tsp grated ginger

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Line a large baking sheet with parchment paper.
  3. In a large bowl, toss broccoli florets, sliced bell pepper, and sliced red onion with olive oil, salt, and pepper. Spread the vegetables in a single layer on the prepared baking sheet.
  4. Roast the vegetables for 10 minutes.
  5. While the vegetables are roasting, whisk together honey, soy sauce, minced garlic, and grated ginger in a small bowl.
  6. Remove the baking sheet from the oven. Push the vegetables to one side and place the salmon fillet on the empty side.
  7. Brush the honey-garlic glaze generously over the salmon.
  8. Return the baking sheet to the oven and roast for another 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork, and the vegetables are tender.
  9. Serve immediately.

Notes

  • You can substitute other vegetables like asparagus, Brussels sprouts, or cherry tomatoes.
  • For a spicier glaze, add a pinch of red pepper flakes.
