1.5 lbs salmon fillet
1 lb broccoli florets
1 red bell pepper, sliced
1 red onion, sliced
3 tbsp olive oil
Salt and pepper to taste
For the Glaze:
1/4 cup honey
2 tbsp soy sauce
1 tbsp minced garlic
1 tsp grated ginger
Instructions
Preheat your oven to 400°F (200°C).
Line a large baking sheet with parchment paper.
In a large bowl, toss broccoli florets, sliced bell pepper, and sliced red onion with olive oil, salt, and pepper. Spread the vegetables in a single layer on the prepared baking sheet.
Roast the vegetables for 10 minutes.
While the vegetables are roasting, whisk together honey, soy sauce, minced garlic, and grated ginger in a small bowl.
Remove the baking sheet from the oven. Push the vegetables to one side and place the salmon fillet on the empty side.
Brush the honey-garlic glaze generously over the salmon.
Return the baking sheet to the oven and roast for another 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork, and the vegetables are tender.
Serve immediately.
Notes
You can substitute other vegetables like asparagus, Brussels sprouts, or cherry tomatoes.
For a spicier glaze, add a pinch of red pepper flakes.
