4 bone-in pork chops, 1 inch thick
2 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon black pepper
2 large firm apples (like Honeycrisp or Fuji), cored and cut into 1/2 inch wedges
1 small red onion, cut into thick wedges
1/4 cup pure maple syrup
3 tablespoons Dijon mustard
1 tablespoon apple cider vinegar
1 teaspoon dried thyme
Instructions
Preheat your oven to 400 degrees Fahrenheit. Line a large rimmed baking sheet with parchment paper for easy cleanup.
Pat the pork chops dry with paper towels. Rub both sides of the chops with olive oil, then season evenly with salt and pepper. Place the chops on one side of the prepared baking sheet.
In a small bowl, whisk together the maple syrup, Dijon mustard, apple cider vinegar, and dried thyme to create the glaze.
Toss the apple wedges and red onion wedges with 1 tablespoon of the maple dijon glaze. Arrange the apples and onions on the other side of the baking sheet around the pork chops.
Brush half of the remaining maple dijon glaze evenly over the tops of the pork chops.
Bake for 15 minutes.
Remove the pan from the oven. Brush the remaining glaze over the pork chops. Flip the apples and onions gently.
Return the pan to the oven and bake for another 5 to 10 minutes, or until the internal temperature of the pork chops reaches 145 degrees Fahrenheit.
Let the pork chops rest on a cutting board for 5 minutes before serving with the roasted apples and onions.
Notes
For juiciest results, use bone-in pork chops that are at least 1 inch thick.
If you prefer a softer apple, use a softer variety like Gala, but check them for doneness earlier.
You can add 1 cup of Brussels sprouts or thick-cut sweet potato chunks to the sheet pan for an added vegetable side.
