  • 1 pound (about 450g) smoked sausage, such as kielbasa, cut into 1-inch thick rounds
  • 1 pound (about 450g) Brussels sprouts, trimmed and halved
  • 1 large sweet potato (about 1 pound / 450g), peeled and cut into 1-inch cubes
  • 1 red onion, cut into 1-inch wedges
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
  2. In a large bowl, combine the halved Brussels sprouts, cubed sweet potato, and red onion wedges.
  3. Drizzle the vegetables with olive oil. Sprinkle with dried thyme, garlic powder, salt, and black pepper. Toss everything together until the vegetables are evenly coated.
  4. Add the sliced sausage to the bowl with the seasoned vegetables. Toss gently to combine.
  5. Spread the sausage and vegetable mixture in a single layer on the prepared baking sheet. Make sure not to overcrowd the pan, as this helps the vegetables roast properly.
  6. Roast for 25-30 minutes, or until the vegetables are tender and slightly caramelized, and the sausage is heated through and lightly browned. Flip the ingredients halfway through cooking to ensure even roasting.
  7. Remove from the oven and serve immediately.
