Sheet Pan Shrimp Fajitas are a quick and delicious weeknight meal. Everything cooks on one pan for minimal cleanup, making dinner a breeze.

  • 1 pound large shrimp, peeled and deveined
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 red onion, sliced
  • 2 tablespoons olive oil
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/4 teaspoon garlic powder
  • Salt and pepper to taste
  • 8 small flour tortillas
  • Optional toppings: shredded lettuce, diced tomatoes, sour cream, guacamole, salsa, shredded cheese

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the shrimp, bell peppers, and red onion with olive oil, chili powder, cumin, paprika, garlic powder, salt, and pepper.
  3. Spread the mixture in a single layer on a large baking sheet.
  4. Bake for 10-12 minutes, or until the shrimp are pink and cooked through and the vegetables are tender-crisp.
  5. Warm the tortillas according to package directions.
  6. Serve the shrimp and vegetable mixture in the warm tortillas with your favorite toppings.

Notes

  • For spicier fajitas, add a pinch of cayenne pepper to the spice mix.
  • You can substitute chicken or steak for the shrimp. Adjust cooking time as needed.
  • If you don’t have fresh bell peppers, frozen sliced peppers can be used.
