Sheet Pan Tofu Fajitas are a delicious and easy vegan meal prep option. This recipe uses simple ingredients and cooks entirely on one sheet pan for minimal cleanup. Perfect for busy weeknights!

  • 1 block (14-16 ounces) extra-firm tofu, pressed and cut into strips
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 red onion, sliced
  • 2 tablespoons olive oil
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and black pepper to taste
  • 8 small flour or corn tortillas
  • Optional toppings: avocado, salsa, vegan sour cream, cilantro

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.
  2. In a large bowl, toss the tofu strips with 1 tablespoon of olive oil, chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, and pepper. Ensure the tofu is evenly coated.
  3. Add the sliced bell peppers and red onion to the same bowl. Drizzle with the remaining 1 tablespoon of olive oil and season with a pinch more salt and pepper. Toss to combine.
  4. Spread the tofu and vegetables in a single layer on the prepared baking sheet.
  5. Bake for 20-25 minutes, flipping halfway through, until the tofu is golden brown and slightly crispy, and the vegetables are tender-crisp.
  6. Warm the tortillas according to package directions.
  7. Serve the tofu and vegetable mixture in the warm tortillas. Add your favorite toppings.

Notes

  • Pressing the tofu is crucial for a good texture. You can use a tofu press or wrap the tofu in paper towels and place a heavy object on top for at least 30 minutes.
  • Feel free to add other vegetables like mushrooms or zucchini.
  • For spicier fajitas, add a pinch of cayenne pepper or some sliced jalapeños to the vegetables.
