1 pound ground turkey
1 tablespoon olive oil
1 medium onion, chopped
2 carrots, chopped
2 celery stalks, chopped
2 cloves garlic, minced
1 teaspoon dried thyme
1 teaspoon dried rosemary
1/2 cup low-sodium chicken broth
1 tablespoon tomato paste
1 cup frozen peas
1 cup frozen corn
Salt and black pepper to taste
2 pounds potatoes, peeled and quartered
1/4 cup milk
2 tablespoons butter

Instructions
Preheat your oven to 375°F (190°C).
In a large skillet, heat the olive oil over medium heat. Add the ground turkey and cook, breaking it up with a spoon, until browned. Drain any excess fat.
Add the chopped onion, carrots, and celery to the skillet. Cook until the vegetables are softened, about 5-7 minutes.
Stir in the minced garlic, thyme, and rosemary. Cook for 1 minute more until fragrant.
Add the chicken broth and tomato paste. Bring to a simmer and cook for 5 minutes, stirring occasionally.
Stir in the frozen peas and corn. Season with salt and pepper to taste. Remove from heat.
While the turkey mixture is simmering, boil the potatoes in a large pot of salted water until tender, about 15-20 minutes. Drain the potatoes and return them to the pot.
Add the milk and butter to the potatoes. Mash until smooth and creamy. Season with salt and pepper to taste.
Spread the turkey mixture evenly in the bottom of a 9×13 inch baking dish.
Spoon the mashed potatoes over the turkey mixture, spreading evenly to cover. You can create decorative peaks with a fork if you like.
Bake for 25-30 minutes, or until the topping is golden brown and the filling is bubbly.
Let it rest for a few minutes before serving.
Notes
You can add other vegetables like mushrooms or bell peppers to the turkey mixture.
For a richer flavor, you can use a mix of milk and heavy cream for the mashed potatoes.
If you prefer a crispier topping, you can broil the pie for the last 1-2 minutes of baking, watching carefully to prevent burning.
