Make fast, flavorful shrimp quesadillas perfect for a weeknight dinner or quick lunch. This recipe delivers tender, seasoned shrimp and perfectly melted cheese inside crispy, restaurant-style tortillas.

  • 1 tablespoon olive oil
  • 1 pound raw shrimp, peeled and deveined
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/2 cup finely chopped onion
  • 1/2 cup shredded Monterey Jack cheese
  • 1/2 cup shredded cheddar cheese
  • 4 large flour tortillas
  • 1 tablespoon butter or cooking spray

Instructions

  1. Heat olive oil in a skillet over medium heat. Add the shrimp, chili powder, cumin, garlic powder, salt, and pepper. Cook for 3 to 4 minutes, stirring often, until the shrimp is pink and cooked through.
  2. Add the chopped onion to the skillet with the shrimp and cook for 1 minute until slightly softened. Remove the shrimp and onion mixture from the heat and set aside.
  3. Wipe the skillet clean. Place a large, non-stick skillet over medium heat and add butter or cooking spray.
  4. Place one tortilla in the hot skillet. Sprinkle half of the Monterey Jack cheese and half of the cheddar cheese over the tortilla. Top the cheese with half of the seasoned shrimp mixture.
  5. Place a second tortilla directly on top of the filling. Cook for 2 to 3 minutes until the bottom tortilla is golden brown and the cheese begins to melt.
  6. Carefully flip the quesadilla using a large spatula. Cook the second side for 2 to 3 minutes until golden brown and the cheese is fully melted.
  7. Remove the finished quesadilla and place it on a cutting board. Repeat the process with the remaining ingredients to make the second quesadilla.
  8. Cut each quesadilla into wedges and serve immediately for a savory shrimp snack or convenient family meal.

Notes

  • For restaurant-style crispy tortillas, press down gently on the top tortilla with your spatula while cooking.
  • You can substitute the cheese blend with Pepper Jack for a little heat.
  • Serve with your favorite toppings like salsa, sour cream, or guacamole.
