  • 1 pound shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon cumin
  • Salt and pepper to taste
  • 8 small corn tortillas
  • 1 ripe mango, diced
  • 1/4 red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 tablespoon lime juice
  • 1/2 jalapeño, seeded and minced (optional)
  • 1/4 cup Greek yogurt or sour cream (for topping)
  • Lime wedges, for serving

Instructions

  1. In a bowl, toss the shrimp with olive oil, chili powder, cumin, salt, and pepper.
  2. Heat a skillet over medium-high heat. Add the seasoned shrimp and cook for 2-3 minutes per side, until pink and cooked through. Remove from skillet.
  3. While the shrimp cooks, prepare the mango salsa. In a medium bowl, combine the diced mango, red onion, cilantro, lime juice, and jalapeño (if using). Season with salt and pepper to taste.
  4. Warm the tortillas by heating them in a dry skillet or directly over a low gas flame for a few seconds per side.
  5. Assemble the tacos: Fill each warm tortilla with cooked shrimp. Top with a generous spoonful of mango salsa.
  6. Add a dollop of Greek yogurt or sour cream, if desired.
  7. Serve immediately with lime wedges on the side.

Notes

  • For a spicier salsa, leave some of the jalapeño seeds in.
  • Feel free to add other vegetables to your salsa, such as diced bell peppers or corn.
  • If you don’t have corn tortillas, flour tortillas also work well.
