1 tablespoon olive oil
1 pound boneless, skinless chicken thighs, cut into 1-inch pieces
1 teaspoon salt
1/2 teaspoon black pepper
1 cup uncooked Arborio rice
2 cups chicken broth
1 lemon, zested and juiced
2 sprigs fresh thyme
1/4 cup chopped fresh parsley
Instructions
Heat olive oil in a large skillet over medium-high heat.
Add chicken pieces, salt, and pepper. Cook until browned on all sides, about 5 minutes.
Stir in Arborio rice and cook for 1 minute, stirring constantly.
Pour in chicken broth, lemon zest, and lemon juice. Add thyme sprigs.
Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until rice is tender and liquid is absorbed.
Remove thyme sprigs. Stir in fresh parsley.
Serve hot.
Notes
For extra flavor, you can add a pinch of red pepper flakes with the chicken.
If you don’t have fresh thyme, you can use 1 teaspoon of dried thyme.
Ensure the chicken is cooked through before serving.
