Sizzling Skillet Shrimp Fajitas are a quick and flavorful Tex-Mex meal. Tender shrimp and colorful bell peppers are seasoned perfectly and cooked in one skillet for an easy weeknight dinner.

1.5 pounds large shrimp, peeled and deveined
2 tablespoons fajita seasoning
1 tablespoon olive oil
1 large onion, sliced
2 bell peppers (any color), sliced
1/4 cup water
Optional toppings: lime wedges, salsa, sour cream, guacamole, shredded cheese, warm tortillas
In a bowl, toss the shrimp with fajita seasoning.
Heat olive oil in a large skillet over medium-high heat.
Add the sliced onion and bell peppers to the skillet. Cook until softened, about 5-7 minutes.
Add the seasoned shrimp to the skillet with the vegetables.
Pour in the water.
Cook, stirring occasionally, until the shrimp are pink and cooked through, about 3-5 minutes.
Serve immediately with your favorite toppings and warm tortillas.
Notes
Adjust the amount of fajita seasoning to your spice preference.
You can use any color of bell peppers you like.
For a spicier fajita, add a pinch of cayenne pepper or a chopped jalapeño to the skillet with the vegetables.
