1 tablespoon olive oil
1 cup chopped yellow onion
1 cup chopped celery
1 cup chopped carrots
2 cloves garlic, minced
1 (10.5 ounce) can condensed cream of mushroom soup
1/2 cup milk
1 (5 ounce) can tuna, drained
2 cups cooked egg noodles
1/2 cup frozen peas
Salt and black pepper to taste
1/4 cup shredded cheddar cheese
Instructions
Heat olive oil in a large skillet over medium heat.
Add onion, celery, and carrots. Cook until softened, about 5 minutes.
Stir in garlic and cook for 1 minute more until fragrant.
Pour in condensed cream of mushroom soup and milk. Stir to combine.
Add drained tuna and cooked egg noodles. Stir well.
Fold in frozen peas.
Season with salt and pepper to taste.
Cook, stirring occasionally, until heated through and peas are tender, about 5-7 minutes.
Sprinkle shredded cheddar cheese over the top.
Cover and let stand for 2 minutes, or until cheese is melted.
Notes
For a creamier casserole, use 3/4 cup milk instead of 1/2 cup.
You can substitute cream of chicken soup for cream of mushroom soup.
