1.5 lbs boneless, skinless chicken breasts
1 large yellow onion, chopped
2 carrots, peeled and diced
2 celery stalks, diced
4 cups chicken broth
1 teaspoon dried thyme
1/2 teaspoon dried rosemary
1/4 teaspoon black pepper
1/2 cup heavy cream
1 (16 ounce) package potato gnocchi
2 cups fresh spinach, chopped
1/4 cup grated Parmesan cheese, plus more for serving
Instructions
Place chicken breasts in the bottom of your slow cooker.
Add chopped onion, diced carrots, and diced celery over the chicken.
Pour in chicken broth.
Sprinkle with dried thyme, dried rosemary, and black pepper.
Cover and cook on low for 6-8 hours or on high for 3-4 hours, until chicken is cooked through and tender.
Remove chicken from the slow cooker and shred it using two forks.
Return shredded chicken to the slow cooker.
Stir in heavy cream and potato gnocchi.
Increase heat to high (if not already there) and cook for another 20-30 minutes, or until gnocchi are tender.
Stir in fresh spinach and grated Parmesan cheese until spinach wilts.
Serve hot, garnished with additional Parmesan cheese if desired.
Notes
For a thicker soup, you can make a cornstarch slurry (1 tablespoon cornstarch mixed with 2 tablespoons cold water) and stir it into the soup during the last 30 minutes of cooking.
If you prefer a smoother soup, you can use an immersion blender to blend a portion of the vegetables before adding the chicken back in.
Store leftover soup in an airtight container in the refrigerator for up to 3-4 days.
