  • 1.5 lbs boneless, skinless chicken breasts or thighs
  • 8 cups chicken broth
  • 2 carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • 1/2 tsp dried rosemary
  • 1 bay leaf
  • Salt and black pepper to taste
  • 4 cups egg noodles (wide or medium)
  • 1/4 cup fresh parsley, chopped (for garnish)

Instructions

  1. Place chicken breasts or thighs at the bottom of your slow cooker.
  2. Add carrots, celery, onion, and minced garlic over the chicken.
  3. Pour in the chicken broth.
  4. Stir in dried thyme, dried rosemary, bay leaf, salt, and black pepper.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until chicken is cooked through and vegetables are tender.
  6. Remove the chicken from the slow cooker and shred it using two forks. Discard the bay leaf.
  7. Return the shredded chicken to the slow cooker.
  8. Add the egg noodles to the slow cooker. Increase heat to high if cooking on low.
  9. Cook for an additional 15-20 minutes, or until the noodles are tender.
  10. Taste and adjust seasoning if needed.
  11. Ladle into bowls and garnish with fresh chopped parsley before serving.
