Easy Slow Cooker Chicken Pot Pie with Biscuit Topping

Make classic comfort food with minimal effort using your slow cooker. This recipe yields a creamy chicken filling topped with flaky biscuits.

  • 2 pounds boneless, skinless chicken breasts or thighs
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1 cup frozen peas
  • 1 cup frozen corn
  • 1 can (10.5 ounces) cream of chicken soup
  • 1 can (10.5 ounces) cream of mushroom soup
  • 1 cup chicken broth
  • 1 teaspoon dried thyme
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1 package (16.3 ounces) refrigerated biscuit dough

Instructions

  1. Place the chicken breasts or thighs into the bottom of your slow cooker.
  2. Add the chopped carrots, celery, frozen peas, and frozen corn over the chicken.
  3. In a separate bowl, whisk together the cream of chicken soup, cream of mushroom soup, chicken broth, thyme, pepper, and salt.
  4. Pour the soup mixture evenly over the chicken and vegetables in the slow cooker.
  5. Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours, until the chicken is cooked through.
  6. Remove the chicken from the slow cooker and shred it using two forks. Return the shredded chicken to the slow cooker and stir to combine with the sauce.
  7. Increase the slow cooker setting to high if it is not already there.
  8. Arrange the refrigerated biscuit dough pieces on top of the chicken mixture, leaving small spaces between them.
  9. Cover and cook on high for 30 to 45 minutes, or until the biscuits are puffed and cooked through. Check the biscuits near the end to prevent overcooking.
  10. Serve immediately.

Notes

  • For a casserole style dish without biscuits, omit the biscuits and stir in 1/2 cup of crushed crackers or breadcrumbs during the last 30 minutes of cooking for thickening.
  • To make this into a soup, use 2 cups of chicken broth instead of 1 cup, and skip the biscuit topping. Serve hot in bowls.
  • You can substitute one can of cream of chicken soup with cream of celery soup for a slight flavor change.
