1 large egg
1 cup canned pumpkin puree

For the Cream Cheese Frosting:
8 ounces cream cheese, softened
1/2 cup (1 stick) unsalted butter, softened
4 cups powdered sugar
1 teaspoon vanilla extract
Instructions
Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
Beat in the egg and then the pumpkin puree until well combined.
In a separate bowl, whisk together the flour, baking soda, cinnamon, nutmeg, cloves, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
Bake for 10-12 minutes, or until the edges are lightly golden and the centers are set.
Remove cookies from the oven and let them cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
While cookies cool, prepare the cream cheese frosting: In a medium bowl, beat together the softened cream cheese and softened butter until smooth.
