  • 4 ounces cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1-2 tablespoons milk or cream

Instructions

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, cinnamon, ginger, nutmeg, cloves, and salt.
  3. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  4. Beat in the egg, then stir in the pumpkin puree and vanilla extract until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  6. Drop rounded tablespoons of dough onto the prepared baking sheets, leaving some space between cookies.
  7. Bake for 10-12 minutes, or until the edges are lightly golden and the cookies are set.
  8. Remove from the oven and let cool on the baking sheets for a few minutes before transferring to a wire rack to cool completely.
  9. While the cookies cool, prepare the cream cheese icing. In a medium bowl, beat the softened cream cheese and butter together until smooth.

  11. Add milk or cream, one tablespoon at a time, until the icing reaches your desired consistency.
  12. Once the cookies are completely cool, spread a generous amount of cream cheese icing over each cookie.
