  • 1 cup yellow cornmeal
  • 1/2 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon sugar (optional, for a touch of sweetness)
  • 1 cup buttermilk (or regular milk with 1 teaspoon vinegar added)
  • 1 large egg, lightly beaten
  • 2 tablespoons melted unsalted butter or vegetable oil, plus more for frying

Instructions

  1. Whisk together the cornmeal, flour, baking powder, salt, and sugar in a medium bowl.
  2. In a separate small bowl, mix the buttermilk and the lightly beaten egg.
  3. Pour the wet ingredients into the dry ingredients. Stir gently until just combined. Do not overmix; a few lumps are fine.
  4. Stir in the 2 tablespoons of melted butter or oil.
  5. Heat about 1/4 inch of oil or shortening in a heavy skillet (cast iron works best) over medium-high heat until shimmering hot.
  6. Carefully drop spoonfuls or small ladlefuls of batter into the hot oil. Flatten slightly with the back of the spoon to form small rounds (about 3 inches wide).
  7. Fry for 2 to 3 minutes per side until deep golden brown and crispy.
  8. Remove the cornbread from the oil and place it on a plate lined with paper towels to drain excess grease.
  9. Serve immediately with honey butter, beans, or greens.

  • For the best texture, ensure your frying fat is hot before adding the batter.
  • Buttermilk gives the best tang and rise; use it if you can.
  • You can make these thinner, like traditional hoecakes, by using less batter per round.
