A simple and delicious Spaghetti Aglio e Olio with Shrimp recipe, perfect for a quick and satisfying weeknight meal. This dish combines classic Italian flavors with the added protein of shrimp.

  • 1 pound spaghetti
  • 1/4 cup olive oil
  • 6 cloves garlic, thinly sliced
  • 1/4 teaspoon red pepper flakes (or more, to taste)
  • 1 pound large shrimp, peeled and deveined
  • 1/4 cup fresh parsley, chopped
  • Salt and freshly ground black pepper to taste
  • Optional: Lemon wedges for serving

Instructions

  1. Cook spaghetti according to package directions in well-salted boiling water. Reserve about 1 cup of the pasta water before draining.
  2. While the pasta cooks, heat the olive oil in a large skillet over medium-low heat. Add the sliced garlic and red pepper flakes. Cook gently, stirring occasionally, until the garlic is fragrant and lightly golden, about 3-5 minutes. Be careful not to burn the garlic.
  3. Add the shrimp to the skillet. Season with salt and pepper. Cook for 2-3 minutes per side, until the shrimp are pink and cooked through.
  4. Add the drained spaghetti and chopped parsley to the skillet with the shrimp and garlic oil.
  5. Toss everything together, adding a splash of the reserved pasta water as needed to create a light sauce that coats the pasta.
  6. Taste and adjust seasoning with salt and pepper if necessary.
  7. Serve immediately, with optional lemon wedges on the side.

Notes

  • For extra flavor, you can add a splash of white wine to the skillet after cooking the shrimp and before adding the pasta.
  • Adjust the amount of red pepper flakes to your preferred level of heat.
  • Ensure your garlic is sliced thinly so it cooks evenly and doesn’t burn.
