This Sparkling Watermelon Lime Cooler is a refreshing and hydrating mocktail perfect for summer. It’s easy to make and bursting with fresh flavors.

Ingredients

  • 4 cups cubed seedless watermelon
  • 1/2 cup fresh lime juice
  • 1/4 cup simple syrup (adjust to taste)
  • 2 cups sparkling water or club soda
  • Fresh mint leaves, for garnish
  • Watermelon wedges, for garnish
  • Lime slices, for garnish

Instructions

  1. Puree the watermelon in a blender until smooth.
  2. Strain the watermelon puree through a fine-mesh sieve into a pitcher, pressing to extract as much juice as possible. Discard the pulp.
  3. Add the fresh lime juice and simple syrup to the watermelon juice. Stir well to combine.
  4. Chill the mixture in the refrigerator for at least 30 minutes.
  5. To serve, fill glasses with ice. Pour the watermelon-lime mixture about halfway full.
  6. Top with sparkling water or club soda.
  7. Garnish with fresh mint leaves, watermelon wedges, and lime slices.

Notes

  • For a sweeter drink, add more simple syrup. For a tarter drink, add more lime juice.
  • You can make the watermelon-lime base ahead of time and store it in the refrigerator for up to 2 days.
  • Add a splash of your favorite spirit if you prefer an alcoholic version.
