- 4 cups cubed seedless watermelon
- 1/2 cup fresh lime juice
- 1/4 cup simple syrup (adjust to taste)
- 2 cups sparkling water or club soda
- Fresh mint leaves, for garnish
- Watermelon wedges, for garnish
- Lime slices, for garnish
- Puree the watermelon in a blender until smooth.
- Strain the watermelon puree through a fine-mesh sieve into a pitcher, pressing to extract as much juice as possible. Discard the pulp.
- Add the fresh lime juice and simple syrup to the watermelon juice. Stir well to combine.
- Chill the mixture in the refrigerator for at least 30 minutes.
- To serve, fill glasses with ice. Pour the watermelon-lime mixture about halfway full.
- Top with sparkling water or club soda.
- Garnish with fresh mint leaves, watermelon wedges, and lime slices.
Notes
- For a sweeter drink, add more simple syrup. For a tarter drink, add more lime juice.
- You can make the watermelon-lime base ahead of time and store it in the refrigerator for up to 2 days.
- Add a splash of your favorite spirit if you prefer an alcoholic version.
