  • 1/4 teaspoon cayenne pepper (adjust for heat preference)
  • 1/4 teaspoon salt
  • 8 small corn tortillas

Instructions

  1. Heat the olive oil in a skillet over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
  2. Add the minced garlic and cook for 1 minute until fragrant.
  3. Stir in the chili powder, cumin, smoked paprika, cayenne pepper, and salt. Cook the spices for about 30 seconds, stirring constantly to toast them. This step brings out their flavor.
  4. Add the rinsed black beans to the skillet. Stir well to coat the beans completely with the spices.
  5. Cook for 5 to 7 minutes, stirring occasionally, until the beans are heated through. You can lightly mash about one-third of the beans with the back of a spoon for a creamier texture, if you like.
  6. Warm the corn tortillas according to package directions (you can warm them in a dry skillet or wrapped in a damp paper towel in the microwave).
  7. Spoon the spicy black bean mixture into the warm tortillas.
