  • 1 lb large shrimp, peeled and deveined
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 4 oz andouille sausage, sliced
  • 1 tablespoon olive oil
  • 1 medium yellow onion, diced
  • 1 green bell pepper, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 3 tablespoons Cajun seasoning (high heat blend)
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper (optional, for extra heat)
  • 1/4 cup chopped fresh parsley
  • 1/4 cup mayonnaise
  • 1 tablespoon Creole mustard
  • 1 teaspoon hot sauce
  • 1/2 teaspoon lemon juice

Instructions

  1. Prepare the dirty rice: In a medium saucepan, combine the rice and chicken broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until all liquid is absorbed. Keep covered off heat.
  2. Prepare the remoulade: In a small bowl, whisk together the mayonnaise, Creole mustard, hot sauce, and lemon juice. Set aside in the refrigerator.
  3. Sauté vegetables and sausage: Heat the olive oil in a large skillet over medium heat. Add the sliced andouille sausage and cook until browned, about 3 minutes. Add the onion, bell pepper, and celery. Cook until softened, about 5 minutes. Add the minced garlic and cook for 1 minute more until fragrant.
  4. Season the shrimp: In a separate bowl, toss the shrimp with 2 tablespoons of the Cajun seasoning, smoked paprika, and cayenne pepper, if using.
  5. Cook the shrimp: Add the seasoned shrimp to the skillet with the sausage and vegetables. Cook for 2-3 minutes per side until pink and cooked through. Do not overcook.
  6. Finish the rice: Fluff the cooked rice with a fork. Stir in the remaining 1 tablespoon of Cajun seasoning and the chopped parsley.
  7. Assemble the bowls: Divide the dirty rice among serving bowls. Top with the spicy shrimp and sausage mixture. Drizzle generously with the prepared remoulade sauce.

  • For a more authentic dirty rice flavor, you can substitute 1/4 cup of finely minced chicken liver with the vegetables.
