Spicy Dilly Beans are a zesty snack with a kick. This recipe adds red pepper flakes and whole chili peppers to the pickling brine, giving classic dilly beans a delightful heat.

2 lbs fresh green beans, trimmed
4 cups white vinegar
4 cups water
1/4 cup pickling salt
8-10 cloves garlic, peeled
4-6 sprigs fresh dill
2-4 whole dried chili peppers (like arbol or de arbol)
2 tsp red pepper flakes
1 tsp black peppercorns
Instructions
Wash and trim the green beans. Pack them tightly into sterilized pint jars, leaving 1/2 inch headspace.
In a large pot, combine white vinegar, water, and pickling salt. Bring the mixture to a rolling boil, stirring until the salt dissolves.
To each jar, add 1-2 cloves of garlic, 1 sprig of fresh dill, 1 whole dried chili pepper, 1/2 tsp red pepper flakes, and 1/4 tsp black peppercorns.
Carefully pour the hot pickling brine over the beans, ensuring they are fully submerged and maintaining 1/2 inch headspace.
Remove air bubbles by gently tapping the jars or using a non-metallic utensil.
Wipe the rims of the jars clean, then place lids and rings on tightly.
Process the jars in a boiling water canner for 10 minutes (adjusting for altitude if necessary).
Carefully remove the jars from the canner and cool them on a wire rack for 24 hours.
Check seals; if a lid doesn’t seal, refrigerate and consume within a few weeks. Store sealed jars in a cool, dark place for up to 1 year.
For best flavor, wait at least 2 weeks before enjoying your spicy dilly beans.
Notes
For extra crunch, you can add a grape leaf or a pinch of Pickle Crisp to each jar.
Adjust the amount of chili peppers and red pepper flakes to your preferred level of spice.
