Prepare flavorful tilapia quickly on the grill using a pungent garlic and herb marinade. This recipe focuses on high-heat cooking for a tender, flaky result.

  • 4 (6 ounce) tilapia fillets, about 1 inch thick
  • 1/4 cup olive oil
  • 4 cloves garlic, minced
  • 1 tablespoon dried oregano
  • 1 tablespoon dried thyme
  • 1 teaspoon red pepper flakes (adjust for spice level)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon unsalted butter, melted (for basting)

Instructions

  1. In a small bowl, combine the olive oil, minced garlic, oregano, thyme, red pepper flakes, salt, black pepper, chopped parsley, and lemon juice. Mix well to create the marinade.
  2. Place the tilapia fillets in a shallow dish or resealable plastic bag. Pour the marinade over the fish, ensuring all sides are coated. Marinate in the refrigerator for 15 to 30 minutes. Do not marinate longer than 30 minutes, as the lemon juice can start to break down the fish texture.
  3. Preheat your grill to medium-high heat (about 400 degrees Fahrenheit). Clean the grill grates thoroughly with a wire brush. Lightly oil the hot grates using a folded paper towel dipped in oil and held with tongs.
  4. Remove the tilapia from the marinade, letting excess drip off. Discard the remaining marinade.
  5. Place the fillets directly on the oiled, hot grates. Grill for 4 to 5 minutes per side.
  6. During the last minute of cooking on the second side, brush the tops of the fillets lightly with the melted butter.
  7. The fish is done when it flakes easily with a fork and reaches an internal temperature of 145 degrees Fahrenheit.
  8. Serve immediately with fresh lemon wedges.

Notes

  • To prevent sticking, make sure your grill grates are very clean and hot before placing the fish down. Oil the grates just before adding the fish.
  • Tilapia cooks fast; monitor it closely to avoid drying it out.
  • Serve this fish with grilled asparagus or a simple rice pilaf to balance the strong flavors.
