8 ounces dried noodles (such as spaghetti, linguine, or soba noodles)
1/2 cup creamy peanut butter
1/4 cup soy sauce (or tamari for gluten-free)
2 tablespoons rice vinegar
1 tablespoon honey or maple syrup
1 tablespoon sesame oil
1-2 teaspoons sriracha or other chili garlic sauce (adjust to your spice preference)
1/4 cup warm water (or more, to reach desired consistency)
1 cup shredded carrots
1 cup thinly sliced red bell pepper
1/2 cup chopped cilantro
1/4 cup chopped peanuts (for garnish)
Lime wedges (for serving)
Instructions
Cook the noodles according to package directions. Drain and rinse under cold water to stop the cooking process.
While the noodles are cooking, prepare the peanut sauce. In a medium bowl, whisk together peanut butter, soy sauce, rice vinegar, honey or maple syrup, sesame oil, and sriracha until smooth.
Gradually whisk in the warm water, a tablespoon at a time, until the sauce reaches your desired consistency. It should be pourable but still thick enough to coat the noodles.
In a large bowl, combine the drained noodles, shredded carrots, sliced red bell pepper, and chopped cilantro.
Pour the peanut sauce over the noodle mixture and toss gently to coat everything evenly.
Serve the salad immediately, garnished with chopped peanuts and lime wedges on the side.
Notes
For a gluten-free option, use tamari instead of soy sauce and gluten-free noodles.
You can add other vegetables like cucumber, edamame, or shredded cabbage.
