8 ounces dried noodles (spaghetti, linguine, or ramen work well)
1/4 cup peanut butter
2 tablespoons soy sauce
1 tablespoon rice vinegar
1 tablespoon honey or maple syrup
1 teaspoon Sriracha or other hot sauce (or more, to taste)
1/2 teaspoon grated fresh ginger
1 clove garlic, minced
2 tablespoons water (or more, to reach desired consistency)
1 cup shredded carrots
1 cup thinly sliced red bell pepper
1/2 cup thinly sliced cucumber
1/4 cup chopped fresh cilantro
2 tablespoons chopped peanuts, for garnish
Instructions
Cook noodles according to package directions. Drain and set aside.
In a medium bowl, whisk together peanut butter, soy sauce, rice vinegar, honey, Sriracha, ginger, and garlic.
Add water one tablespoon at a time, whisking until the sauce is smooth and reaches your desired consistency.
Add the cooked noodles to the bowl with the sauce. Toss well to coat.
Add the shredded carrots, red bell pepper, and cucumber to the bowl. Toss gently to combine.
Serve immediately, garnished with fresh cilantro and chopped peanuts.
Notes
For a vegan option, use maple syrup instead of honey.
Adjust the amount of Sriracha to control the spice level.
Feel free to add other vegetables like broccoli florets, snow peas, or edamame.
