Spinach Stuffed Salmon Fillets

A recipe for baking salmon fillets stuffed with a creamy spinach and cheese filling.

  • 4 (6 ounce) salmon fillets, skin on or off
  • 1 tablespoon olive oil
  • Salt and black pepper to taste
  • 1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
  • 4 ounces cream cheese, softened
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1/4 teaspoon dried thyme
  • 2 tablespoons breadcrumbs (optional, for topping)
  • 1 lemon, sliced for garnish

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Lightly grease a baking sheet or line it with parchment paper.
  2. Prepare the stuffing: In a medium bowl, combine the dried spinach, softened cream cheese, Parmesan cheese, minced garlic, and dried thyme. Mix until the ingredients are fully incorporated and smooth.
  3. Prepare the salmon: Pat the salmon fillets dry with paper towels. If the fillets are thick, carefully cut a deep pocket into the thickest side of each fillet, being careful not to cut all the way through to the bottom.
  4. Stuff the salmon: Spoon the spinach mixture evenly into the pockets of the salmon fillets. If you cannot cut pockets, simply spread the mixture over the top surface of the fillets.
  5. Place the stuffed fillets on the prepared baking sheet. Drizzle the tops lightly with olive oil and season with salt and pepper. If using, sprinkle breadcrumbs over the filling.
  6. Bake for 12 to 18 minutes, depending on the thickness of your fillets, until the salmon flakes easily with a fork and reaches an internal temperature of 145 degrees Fahrenheit (63 degrees Celsius).
  7. Remove from the oven. Garnish with fresh lemon slices before serving.

Notes

  • For a low-carb option, omit the breadcrumbs.
  • If you prefer a crispier topping without breadcrumbs, briefly broil the salmon for the last minute of cooking, watching closely to prevent burning.
  • You can substitute the cream cheese with goat cheese or Neufchâtel cheese for a different flavor profile.
