1 pound fresh green beans, trimmed
3 tablespoons olive oil
4 cloves garlic, minced
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
1 tablespoon lemon juice (optional)
Instructions
Preheat your oven to 425 degrees Fahrenheit (220 degrees Celsius).
Toss the trimmed green beans with 2 tablespoons of olive oil, salt, and pepper on a large baking sheet. Spread them in a single layer.
Roast the green beans for 10 minutes.
While the beans roast, heat the remaining 1 tablespoon of olive oil in a small skillet over medium heat. Add the minced garlic and cook for 1 minute until fragrant. Do not let the garlic brown.
Remove the baking sheet from the oven. Add the roasted garlic mixture to the beans and toss quickly to coat.
Return the beans to the oven and roast for an additional 5 to 7 minutes, or until the beans are bright green and slightly blistered but still crisp.
Remove from the oven. If using, toss with lemon juice immediately before serving.
Notes
For the best texture, use a large baking sheet so the beans roast instead of steam.
If you prefer a stronger garlic flavor, roast the whole cloves with the beans for the first 10 minutes, then mash them and toss with the beans before the final roast.
To check for doneness, taste one bean; it should have a slight snap when you bite it.
