  • 2 medium sweet potatoes
  • 1 tablespoon olive oil
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1/2 cup corn kernels (fresh or frozen)
  • 1/4 cup chopped red onion
  • 1/4 cup chopped cilantro
  • 1 tablespoon lime juice
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon cumin
  • Salt and black pepper to taste
  • 1 avocado, diced
  • Optional toppings: salsa, sour cream, shredded cheese

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash the sweet potatoes and prick them several times with a fork.
  3. Rub the sweet potatoes with olive oil and place them on a baking sheet.
  4. Bake for 45-60 minutes, or until tender when pierced with a fork.
  5. While the sweet potatoes are baking, prepare the black bean filling. In a medium bowl, combine the rinsed black beans, corn, chopped red onion, chopped cilantro, lime juice, chili powder, and cumin.
  6. Season with salt and pepper to taste.
  7. Once the sweet potatoes are tender, carefully slice them lengthwise, being careful not to cut all the way through.
  8. Gently open the sweet potatoes and fluff the inside with a fork.
  9. Spoon the black bean mixture generously into each sweet potato half.
  10. Top with diced avocado and any other desired toppings.
  11. Serve immediately and enjoy!

  • For a quicker meal, you can microwave the sweet potatoes until tender before baking.
