Make this ultimate festive Sugar Cookie Cheesecake. You get a delicious base made from sugar cookies, a creamy, dreamy cheesecake filling, and a sweet topping. It is simple to make and perfect for any celebration.

Ingredients

Scale
  • 1 1/2 cups crushed sugar cookies (homemade or store-bought)
  • 1/4 cup melted butter
  • 16 ounces cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
  • 3 large eggs
  • 1/2 cup sugar cookie dough (optional, for mixing into batter)
  • Festive sprinkles for decoration

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch springform pan.
  2. Combine the crushed sugar cookies and melted butter. Press this mixture firmly into the bottom of the prepared springform pan to form the crust. Bake for 10 minutes. Let cool slightly.
  3. In a large bowl, beat the softened cream cheese and granulated sugar until smooth. Mix in the vanilla extract and sour cream.
  4. Beat in the eggs one at a time until just combined. Do not overmix.
  5. If using, gently fold in the sugar cookie dough pieces.
  6. Pour the cheesecake batter over the cooled crust.
  7. Bake for 45 to 55 minutes, or until the edges are set and the center has a slight wobble.
  8. Turn off the oven, crack the door open, and let the cheesecake cool inside the oven for 1 hour. This prevents cracking.
  9. Remove from the oven and cool completely on a wire rack. Then, chill in the refrigerator for at least 4 hours, or preferably overnight.
  10. Before serving, top generously with festive sprinkles.

Notes

  • Using store-bought sugar cookies for the crust saves time.
  • Make sure your cream cheese is fully softened for a smooth batter.
  • Chilling overnight gives you the best texture.
  • You can make a simple glaze using powdered sugar and milk to drizzle over the top before adding sprinkles.
