Instructions
Place the soft sugar cookies in a large bowl or food processor. Crush the cookies until they form fine crumbs.
Add the softened cream cheese to the cookie crumbs. Mix by hand or pulse in the food processor until the mixture comes together and forms a dough-like consistency.
Roll the mixture into small balls, about 1 inch in diameter. Place the balls on a baking sheet lined with parchment paper.
Chill the cookie balls in the refrigerator for at least 30 minutes to firm them up.
Melt the white chocolate wafers according to package directions. If using, stir in the shortening or coconut oil for a thinner consistency.
Dip each chilled truffle ball into the melted white chocolate, ensuring it is fully coated. Use a fork or dipping tool to lift the truffle out, allowing excess chocolate to drip off.
Place the coated truffles back onto the parchment-lined sheet. Immediately top with sprinkles before the chocolate sets.
Allow the chocolate to set completely at room temperature or chill briefly until firm.
Notes
If you do not have soft frosted cookies, you can use plain sugar cookies and add 1 tablespoon of powdered sugar to the mix for sweetness.
For easier dipping, use a small cookie scoop to portion the dough before chilling.
Store finished truffles in an airtight container in the refrigerator.
