The Ultimate Moist Sugar-Free Banana Bread (Naturally Sweetened with Ripe Bananas)

Bake this wonderfully moist, naturally sweet banana bread using only the sugars from very ripe bananas. It is a guilt-free treat perfect for breakfast or a snack and suits diabetic diets.

  • 3 large, very ripe bananas, mashed well
  • 1/2 cup unsweetened applesauce
  • 1/4 cup melted coconut oil or neutral oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 3/4 cups whole wheat pastry flour (or substitute with almond flour for a lower-carb option)
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1/2 cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a standard 9×5 inch loaf pan, or line it with parchment paper.
  2. In a large bowl, combine the mashed bananas, applesauce, melted oil, eggs, and vanilla extract. Mix until just combined.
  3. In a separate medium bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt. If you are using nuts, stir them into the dry ingredients now.
  4. Gently fold the dry ingredients into the wet ingredients using a spatula. Mix only until no streaks of flour remain. Do not overmix to keep your bread moist.
  5. Pour the batter into the prepared loaf pan and spread it evenly.
  6. Bake for 50 to 60 minutes, or until a wooden skewer inserted into the center comes out clean.
  7. Let the bread cool in the pan for 10 minutes before carefully removing it to a wire rack to cool completely before slicing.

Notes

  • For a lower-carb or keto banana bread alternative, substitute the whole wheat pastry flour with 1 3/4 cups of almond flour and add 1 teaspoon of xanthan gum to the dry ingredients.
  • The riper your bananas are (the more brown spots they have), the sweeter your final loaf will be, reducing any need for extra sweeteners.
  • If you prefer a richer flavor, substitute the applesauce with 1/4 cup of plain Greek yogurt for added moisture and protein.
