A simple recipe for incredibly moist banana bread that uses only very ripe bananas for sweetness, making it a guilt-free, no added sugar option perfect for breakfast or snacks.

  • 3 very ripe large bananas, mashed
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 3/4 cups all-purpose flour (or almond flour for low carb)
  • 1 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup unsweetened applesauce (optional, for extra moisture)
  • 1/4 cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a standard 9×5 inch loaf pan.
  2. In a large bowl, mash the ripe bananas thoroughly with a fork until mostly smooth.
  3. Stir the melted butter, eggs, and vanilla extract into the mashed bananas until combined.
  4. In a separate medium bowl, whisk together the flour, baking soda, cinnamon, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Do not overmix.
  6. Fold in the optional applesauce and nuts, if using.
  7. Pour the batter into the prepared loaf pan.
  8. Bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the bread cool in the pan for 10 minutes before carefully removing it to a wire rack to cool completely.

Notes

  • The riper the bananas are (brown or black spots), the sweeter your bread will be, reducing the need for any other sweetener.
  • For a lower-carb version, substitute the all-purpose flour with 1 3/4 cups of fine almond flour and add 1 teaspoon of xanthan gum.
  • You can add 1/2 cup of sugar-free chocolate chips for variation.
