- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 tablespoon olive oil
- 1/2 cup sun-dried tomatoes, drained and chopped
- 2 cloves garlic, minced
- 1/4 cup chicken broth
- 2 tablespoons fresh basil, chopped
- Salt and pepper to taste
- Season chicken pieces with salt and pepper.
- Heat olive oil in a skillet over medium-high heat.
- Add chicken and cook until browned on all sides.
- Stir in sun-dried tomatoes and garlic; cook for 1 minute until fragrant.
- Pour in chicken broth and scrape up any browned bits from the bottom of the skillet.
- Simmer for 5-7 minutes, or until chicken is cooked through and the sauce has slightly thickened.
- Stir in fresh basil.
- Serve immediately.
Notes
- For extra flavor, you can add a pinch of red pepper flakes.
- If you don’t have fresh basil, you can use 1 teaspoon of dried basil.
