1 pound pork tenderloin, cut into 1-inch pieces
1/4 cup cornstarch
1/4 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons vegetable oil
1/2 cup pineapple chunks
1/2 green bell pepper, cut into 1-inch pieces
1/2 red bell pepper, cut into 1-inch pieces
1/4 cup ketchup
2 tablespoons rice vinegar
2 tablespoons brown sugar
1 tablespoon soy sauce
1 teaspoon cornstarch
1/4 cup water
Instructions
In a bowl, toss pork pieces with 1/4 cup cornstarch, salt, and pepper.
Heat 1 tablespoon of vegetable oil in a wok or large skillet over medium-high heat. Add pork in a single layer and cook until browned on all sides. Remove pork and set aside.
Add the remaining 1 tablespoon of vegetable oil to the wok. Add pineapple chunks, green bell pepper, and red bell pepper. Stir-fry for 2-3 minutes until vegetables are tender-crisp.
In a small bowl, whisk together ketchup, rice vinegar, brown sugar, soy sauce, 1 teaspoon cornstarch, and water until smooth.
Return the pork to the wok with the vegetables. Pour the sauce over the pork and vegetables.
Stir and cook until the sauce thickens and coats the pork and vegetables, about 1-2 minutes.
Serve immediately.
Notes
For extra crispy pork, ensure the pieces are dry before coating with cornstarch.
Adjust the sweetness and tanginess of the sauce to your preference by adding more brown sugar or rice vinegar.
You can add other vegetables like onions or carrots to the stir-fry.
