  • 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 tablespoon cornstarch
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons vegetable oil
  • 1 cup fresh pineapple chunks
  • 1/2 red bell pepper, chopped
  • 1/4 cup sweet chili sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon grated fresh ginger
  • 1 clove garlic, minced
  • Cooked rice, for serving
  • Sesame seeds, for garnish (optional)
  • Chopped green onions, for garnish (optional)

Instructions

  1. In a medium bowl, toss chicken pieces with cornstarch, salt, and pepper.
  2. Heat vegetable oil in a large skillet or wok over medium-high heat.
  3. Add chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
  4. Add pineapple chunks and red bell pepper to the skillet. Cook for 3-4 minutes until slightly tender.
  5. In a small bowl, whisk together sweet chili sauce, soy sauce, ginger, and garlic.
  6. Return chicken to the skillet. Pour sauce over chicken and vegetables.
  7. Stir to coat and cook for 1-2 minutes until sauce has thickened.
  8. Serve immediately over cooked rice. Garnish with sesame seeds and green onions if desired.
