Ingredients
Sweet Potatoes, cubed
Black Beans, rinsed and drained
Diced Tomatoes, undrained
Vegetable Broth
Onion, chopped
Bell Pepper, chopped
Chili Powder
Cumin
Garlic, minced
Olive Oil
Salt and Pepper to taste
Instructions
Heat olive oil in a large pot over medium heat.
Add onion and bell pepper. Cook until soft.
Stir in garlic, chili powder, and cumin. Cook for one minute until fragrant.
Add sweet potatoes, black beans, diced tomatoes, and vegetable broth to the pot.
Bring the mixture to a boil. Then reduce heat to low.
Simmer, covered, for 25-30 minutes, or until sweet potatoes are tender.
Season with salt and pepper.
Serve hot and enjoy your filling meal!
