  • 1 cup mashed sweet potato (about 1 medium sweet potato)
  • 1/2 cup unsalted butter, melted
  • 1/2 cup granulated sugar
  • 1/4 cup packed light brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup all-purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup chopped pecans, divided

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour an 8×8 inch baking pan.
  2. In a large bowl, combine the mashed sweet potato and melted butter. Mix until smooth.
  3. Stir in the granulated sugar and brown sugar until well combined.
  4. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. In a separate medium bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  7. Fold in half of the chopped pecans.
  8. Spread the batter evenly into the prepared baking pan.
  9. Sprinkle the remaining chopped pecans over the top.
  10. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out with moist crumbs attached.
  11. Let the brownies cool completely in the pan before cutting into squares.

  • You can substitute walnuts for pecans if preferred.
