2 tablespoons olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
4 cups arugula or mixed greens
1/2 cup crumbled feta cheese
1/4 cup toasted pecans or walnuts
1/4 cup dried cranberries
For the Maple Vinaigrette:
3 tablespoons olive oil
2 tablespoons apple cider vinegar
1 tablespoon pure maple syrup
1 teaspoon Dijon mustard
1/4 teaspoon salt
Instructions
Preheat your oven to 400°F (200°C).
Toss the diced sweet potatoes with 2 tablespoons of olive oil, salt, and pepper on a baking sheet.
Roast for 20 to 25 minutes, flipping halfway, until the potatoes are tender and slightly caramelized. Let them cool slightly.
While the potatoes roast, prepare the vinaigrette. Whisk together the 3 tablespoons of olive oil, apple cider vinegar, maple syrup, Dijon mustard, and salt in a small bowl until emulsified.
In a large bowl, combine the arugula, roasted sweet potatoes, crumbled feta, toasted nuts, and dried cranberries.
Drizzle the maple vinaigrette over the salad. Toss gently to coat all ingredients.
Serve immediately or chill for later use.

You can substitute goat cheese for feta if you prefer a creamier texture.
