1 tablespoon olive oil
1 pound ground turkey
1 medium onion, chopped
2 cloves garlic, minced
2 medium sweet potatoes, peeled and diced into 1/2-inch pieces
1 (15 ounce) can black beans, rinsed and drained
1 (10 ounce) can diced tomatoes with green chilies, undrained
1 teaspoon chili powder
1/2 teaspoon cumin
1/4 teaspoon salt
1/4 teaspoon black pepper
1/2 cup shredded cheddar cheese (optional)
2 tablespoons chopped fresh cilantro for garnish
Instructions
Heat the olive oil in a large skillet over medium-high heat. Add the ground turkey and cook, breaking it up with a spoon, until browned. Drain any excess grease.
Add the chopped onion to the skillet and cook until softened, about 3 minutes. Add the minced garlic and cook for 1 minute more until fragrant.
Stir in the diced sweet potatoes, black beans, diced tomatoes with green chilies, chili powder, cumin, salt, and pepper.
Bring the mixture to a simmer. Reduce the heat to medium-low, cover the skillet, and cook for 12 to 15 minutes, stirring occasionally, until the sweet potatoes are tender.
Remove the lid. If using cheese, sprinkle it over the top and cook until melted, about 2 minutes.
Garnish with fresh cilantro before serving.
Notes
For a spicier flavor, add 1/4 teaspoon of cayenne pepper with the other spices.
If you do not have fresh sweet potatoes, you can substitute with 1 (15 ounce) can of sweet potatoes, drained, added during the last 5 minutes of cooking.
This recipe works well with ground beef or ground chicken instead of turkey.
