1 pound ground beef
1 packet taco seasoning mix
1 head iceberg lettuce, chopped
1 cup cherry tomatoes, halved
1/2 cup chopped red onion
1 can (15 ounces) kidney beans, rinsed and drained
1 cup shredded cheddar cheese
1 cup crushed tortilla chips or Doritos (optional)
1/2 cup Catalina dressing or your preferred creamy dressing
Instructions
Brown the ground beef in a skillet over medium heat. Drain any excess fat.
Stir the taco seasoning mix and the amount of water specified on the packet into the beef. Simmer for 5 to 7 minutes until the sauce thickens. Set aside to cool slightly.
Prepare your base by placing the chopped lettuce in a large bowl or individual serving bowls.
Layer the remaining ingredients over the lettuce: tomatoes, red onion, kidney beans, and shredded cheese.
Spoon the seasoned ground beef mixture over the layers.
Drizzle generously with Catalina dressing.
Sprinkle crushed tortilla chips or Doritos on top for crunch just before serving.
Notes
For a healthy version, substitute ground turkey and use a low-fat dressing.
To make this low carb, omit the tortilla chips and use shredded cabbage instead of some of the lettuce.
You can prepare the beef mixture and chop the vegetables ahead of time for quick assembly later.
