  • 2 large sweet potatoes
  • 1 tablespoon olive oil
  • 1 pound ground turkey or black beans
  • 1 packet taco seasoning
  • 1/2 cup water
  • 1 cup shredded lettuce
  • 1/2 cup salsa
  • 1/4 cup shredded cheese (optional)
  • 2 tablespoons sour cream or Greek yogurt
  • 1/4 cup chopped fresh cilantro

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash the sweet potatoes well and prick them several times with a fork.
  3. Bake the sweet potatoes for 45 to 60 minutes, or until they are tender when squeezed.
  4. While the potatoes bake, prepare the filling. Heat olive oil in a skillet over medium heat.
  5. Add the ground turkey or black beans. Cook until browned or heated through.
  6. Stir in the taco seasoning and water. Simmer for 5 minutes, allowing the liquid to reduce slightly.
  7. Once the sweet potatoes are done, carefully slice them open lengthwise. Fluff the insides gently with a fork.
  8. Spoon the taco filling evenly into the opened sweet potatoes.
  9. Layer your toppings: top with shredded lettuce, salsa, cheese (if using), sour cream or yogurt, and cilantro.
