2 large sweet potatoes
1 tablespoon olive oil
1 pound ground turkey or black beans
1 packet taco seasoning
1/2 cup water
1 cup shredded lettuce
1/2 cup salsa
1/4 cup shredded cheese (optional)
2 tablespoons sour cream or Greek yogurt
1/4 cup chopped fresh cilantro
Instructions
Preheat your oven to 400°F (200°C).
Wash the sweet potatoes well and prick them several times with a fork.
Bake the sweet potatoes for 45 to 60 minutes, or until they are tender when squeezed.
While the potatoes bake, prepare the filling. Heat olive oil in a skillet over medium heat.
Add the ground turkey or black beans. Cook until browned or heated through.
Stir in the taco seasoning and water. Simmer for 5 minutes, allowing the liquid to reduce slightly.
Once the sweet potatoes are done, carefully slice them open lengthwise. Fluff the insides gently with a fork.
Spoon the taco filling evenly into the opened sweet potatoes.
Layer your toppings: top with shredded lettuce, salsa, cheese (if using), sour cream or yogurt, and cilantro.
Serve immediately and enjoy your healthy taco creation!
Notes
You can prepare the sweet potatoes ahead of time and reheat them before serving.
For a vegan option, use black beans instead of turkey and skip the cheese and sour cream.
