A simple, hearty, one-pan breakfast casserole using frozen tater tots, sausage, eggs, and cheese. Assemble it the night before for an easy morning bake.

1 (32 ounce) bag frozen tater tots
1 pound breakfast sausage, cooked and drained
1 cup chopped onion
12 large eggs
1 cup milk
1 teaspoon salt
1/2 teaspoon black pepper
2 cups shredded cheddar cheese
Instructions
Grease a 9×13 inch baking dish.
Arrange half of the frozen tater tots in a single layer on the bottom of the prepared dish.
Sprinkle the cooked sausage and chopped onion evenly over the tots.
Top with half of the shredded cheese.
Arrange the remaining tater tots over the cheese layer.
In a large bowl, whisk together the eggs, milk, salt, and pepper.
Pour the egg mixture evenly over the tots in the baking dish.
Cover the dish tightly with plastic wrap or foil. Refrigerate for at least 4 hours or overnight.
When ready to bake, preheat your oven to 375 degrees Fahrenheit. Remove the plastic wrap.
Bake covered for 30 minutes.
Remove the foil and sprinkle the remaining cheese over the top.
Bake uncovered for another 15 to 20 minutes, or until the eggs are set and the tots are golden brown and crispy.
Let the casserole rest for 5 minutes before slicing and serving.
Notes
You can substitute bacon for the sausage if you prefer.
For extra flavor, add 1/2 teaspoon of garlic powder to the egg mixture.
This casserole freezes well; cool completely, wrap tightly, and freeze for up to 3 months. Thaw overnight in the refrigerator before baking.
