  • 2 salmon fillets (about 6 oz each)
  • 1 cup cooked rice
  • 1 cup mixed vegetables (broccoli florets, sliced carrots, snow peas)
  • 2 tablespoons teriyaki sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon honey
  • 1 teaspoon grated fresh ginger
  • 1 clove garlic, minced
  • 1 teaspoon sesame oil
  • Sesame seeds, for garnish
  • Green onions, sliced, for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, whisk together teriyaki sauce, soy sauce, honey, grated ginger, and minced garlic.
  3. Place salmon fillets on a baking sheet. Brush half of the teriyaki glaze over the salmon.
  4. Bake for 10-12 minutes, or until salmon is cooked through and flakes easily with a fork.
  5. While the salmon is baking, steam or lightly sauté the mixed vegetables until tender-crisp.
  6. Divide the cooked rice between two bowls.
  7. Top the rice with the cooked salmon and mixed vegetables.
  8. Drizzle the remaining teriyaki glaze over the salmon and vegetables.
  9. Garnish with sesame seeds and sliced green onions.

Notes

  • You can use any kind of rice you prefer, such as brown rice or quinoa.
  • Feel free to add other vegetables like bell peppers, edamame, or corn.
  • Adjust the sweetness of the teriyaki glaze to your liking by adding more or less honey.
