This teriyaki salmon and broccoli sheet pan dinner is a complete, healthy, and easy-to-clean-up meal.   • 1.5 lbs salmon fillets, skin on or off
  • 4 cups broccoli florets
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • For the Teriyaki Sauce:
  • 1/2 cup soy sauce (low sodium preferred)
  • 1/4 cup mirin
  • 2 tablespoons sake (or substitute with more mirin)
  • 1 tablespoon brown sugar
  • 1 teaspoon grated fresh ginger
  • 2 cloves garlic, minced
  • 1 teaspoon cornstarch mixed with 1 tablespoon water (slurry)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
  2. In a small bowl, whisk together the soy sauce, mirin, sake, brown sugar, grated ginger, and minced garlic for the teriyaki sauce.
  3. In a separate large bowl, toss the broccoli florets with olive oil, salt, and pepper until evenly coated. Spread the broccoli in a single layer on one side of the prepared baking sheet.
  4. Place the salmon fillets on the other side of the baking sheet. Season the salmon with a pinch of salt and pepper.
  5. Brush about half of the teriyaki sauce over the salmon fillets.
  6. Bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork, and the broccoli is tender-crisp.
  7. While the salmon and broccoli are baking, pour the remaining teriyaki sauce into a small saucepan. Bring to a simmer over medium heat.
  8. Whisk in the cornstarch slurry and cook, stirring constantly, until the sauce thickens to your desired consistency, about 1-2 minutes.
  9. Once the salmon and broccoli are out of the oven, drizzle the thickened teriyaki sauce over the cooked salmon and broccoli.
  10. Serve immediately, perhaps with a side of rice or quinoa.
