1 pound noodles (spaghetti or linguine work well)
1/2 cup creamy peanut butter
1/4 cup soy sauce
3 tablespoons rice vinegar
2 tablespoons honey or maple syrup
1 tablespoon sesame oil
1 tablespoon fresh lime juice
1 teaspoon grated fresh ginger
1 clove garlic, minced
1/2 teaspoon red pepper flakes (or to taste)
1/4 cup hot water (for thinning)
Optional garnish: chopped peanuts, cilantro, sliced green onions
Instructions
Cook noodles according to package directions. Drain well and set aside.
While noodles cook, prepare the sauce. In a medium bowl, whisk together the peanut butter, soy sauce, rice vinegar, honey or maple syrup, sesame oil, lime juice, ginger, garlic, and red pepper flakes.
Gradually whisk in the hot water until the sauce reaches a smooth, pourable consistency. Add a little more water if the sauce seems too thick.
Place the drained noodles back into the pot or a large serving bowl.
Pour the peanut sauce over the warm noodles. Toss everything together until the noodles are evenly coated.
Serve immediately. Garnish with chopped peanuts, cilantro, and green onions if you wish.
Notes
You can adjust the spice level by adding more or less red pepper flakes.
For a richer flavor, toast your peanuts before chopping them for garnish.
This sauce keeps well in the refrigerator for up to one week. You may need to add a splash of water when reheating to restore the texture.
