  • 1 cup strong brewed coffee, cooled
  • 1/4 cup coffee liqueur or rum (optional)
  • 3 large eggs, separated
  • 3/4 cup granulated sugar
  • 16 ounces mascarpone cheese, softened
  • 1 teaspoon vanilla extract
  • Unsweetened cocoa powder, for dusting

Instructions

  1. Dip each ladyfinger briefly into the cooled coffee mixture.
  2. Arrange a single layer of dipped ladyfingers in the bottom of a serving dish.
  3. In a bowl, whisk together egg yolks and sugar until pale and creamy.
  4. Beat in the softened mascarpone cheese and vanilla extract until smooth.
  5. In a separate bowl, beat egg whites until stiff peaks form.
  6. Gently fold the beaten egg whites into the mascarpone mixture.
  7. Spread half of the mascarpone mixture over the ladyfingers.
  8. Repeat with another layer of dipped ladyfingers and the remaining mascarpone mixture.
  9. Cover and refrigerate for at least 4 hours, or preferably overnight.
  10. Dust generously with cocoa powder before serving.
